Kneading the dough

When mixing and kneading, my dough scraper doesn’t stay on the edge. It pulls away and cuts through the dough almost ripping it. Is this normal?

  • Yes, this is normal. Especially when kneading a particularly sticky dough. At the dough moves around the bowl, it can pull the dough knife away from the side of the bowl with it. Then when the dough rotates from behind the roller or dough hook, the dough knife will cut through the ball of dough.

You are welcome to send a video of the process to our customer support desk at: info-us@ankarsrum.com and we will be happy to take a closer look and provide any tips for reducing this, It could be as simple as adjusting the speed or arm/roller placement, but it is normal and it will not harm your dough or prevent the gluten from being produced.
