Dough Knife Issues (recent)

I have about 1200 loaves through this machine and up until about a week ago, no issues. However, recently the dough knife has been causing me some serious issues. I don’t know why but the knife has started to pull away from the side of the bowl and basically rips the dough apart as the bowl spins. This is not an issue with my recipe or process - as i mentioned isn’t he first sentence, I’ve made over 1200 loaves with the same few recipes and this has never happened

I am aware that sometimes dough gets stuck behind the knife and requires a quick scrape to clear - this is not that.

It doesn’t matter if i move the roller closer too or further away from the side of the bowl, or if i slow up or speed down the rotation. The dough knife almost immediately pulls away from the side of the bowl and gets caught in the larger dough mass, causing a ton of pulling and ripping in the dough

What could have changed? Do i need a new knife?

    It seems like the dough knife might be slightly bent. I recommend reaching out to the distributor in your country to purchase a new one.

  • Hi, this is my first time making sourdough with my new ankarsum. I am having the same problem as in this post - the scraper is cutting the bread dough. It needed constant watching to clear the dough.  The mixer was a gift and my nieces and nephew sent it to me through Amazon. Do I need a new scraper?

  • I have the exact same problem as the OP. I bought my Ank in June 2020 and have since baked approximately 300 loaves and this problem only started about 4 months ago. My bread recipe has not changed in 6 years. I take great care of my Ank and can't believe that the knife could be even slightly bent as I am the only one using it and never put any force on it and the knife is always stored in the bowl. I was thinking that maybe the plastic of the knife is getting worn out since it rubs against the side of the bowl but seeing that the OP stated q200 loaves and I'm only at about 300, I found this odd. I am curious if the OP has ordered a new knife and if this has solved the problem before I order one myself. I would like to hear from someone.

  • Thank you for your question. I have personally owned my Ankarsrum for 25+ years. I have noticed that from time to time, the stickiness of my dough will stick to the dough knife, pulling it away from the side of the bowl. It is my opinion that this is normal and most likely is happening due to moisture in the air and can also be more common in higher hydration doughs. I just let the mixer continue kneading and didn't adjust the roller, speed or any other aspect of the mixer and the dough turned out perfect.

  • After creating this post I re-calculated the quantity of loaves and am closer to 600 loaves baked after 6 years. The problem began so suddenly like after Christmas. I dont see a screw for adjusting the knife like there is for the dough hook but there is definitely a problem with the contact of the knife with the side of the bowl that wasn't there before. Im still debating if ordering a new knife would solve this problem that I never had before but the more I think about it the more I believe that the knife is at fault because what else could be?

    You are welcome to send us a video of the mixer while making bread but as I mentioned in a previous response, I don't believe there is anything wrong with your dough knife. The dough sticking to and pulling the dough knife away is a normal occurrence and is more often caused by humidity in the air or moisture content in the dough.

  • I just made a batch this morning so the video will have to wait but I notice something just now. The bottom of the knife is resting on the bowl which looks suspicious. In doing so, this will pull the knife away from the side of the bowl. If I pull up about 1/8 of an inch on the knife it will rest against the side of the bowl like it has always had before. Like I said before and I tried with different screwdrivers, there are not screw for adjustment like for the dough hook. Its like the arm of the knife is going a little too far in this hole creating the problem. The consistency and hydration of the dough is always the same that its been for 6 years and that is a certainty 100%..I understand your concern about the hydration but again, this is not the problem in this case.

  • The dough knife does rest on the bottom of the bowl. This is how it is designed so that is not the issue. Because your machine is 6 years old, it may help to purchase a new dough knife, but I believe this is unnecessary because as I mentioned, I made bread over the weekend, and my dough (same recipe I always make) was sticking to and pulling the dough knife away from the side of the bowl. Sometimes it does this while other times it does not. This is why I believe it has more to do with the humidity in the environment. But again, there is no harm in this happening.
