Can the mixer be used for Italian meringue?

Hi, I'd like to ask if I can use the mixer to make Italian meringue - wherein you have to pour hot syrup on the whipped meringue? If so, which do I use to whip the italian meringue? Which bowl, which attachment? I'm worried that the plastic bowl might melt, because in other mixers, I typically use a stainless steel bowl and wire whisk.  For Ankarsrum, which do I use?

  • Hi!

We now offer a stainless steel bowl available as an addon to our mixer. It's very recently been introduced, so it may not have landed on all markets yet, but get in touch with your local retailer and they'll be able to tell you when you can get your hands on it.

  • So, as a follow up to the above question: can the plastic bowl be used to make an Italian meringue? I read somewhere on the write that it can withstand making meringues, but Italian is much hotter than swiss meringue. Thanks!

  • Hi,

the plastic bowl starts to deform at around 120 degrees celsius, so any prolonged exposure to temperatures around there is not advisable, the stainless steel whisk bowl is a better alternative in that case.
