Why does the dough roller and dough knife shed plastic?

Is it dangerous to use the dough roller or dough knife if theres scratches or if they are damaged? I'm asking because I've heard that plastic can release dangerous compounds into the the dough.

All plastic that is used in our machine and accesories are BPA free and approved according to the European Union regulation on food safe materials. Some of these issues are covered by warranty, so if you are hesitant, please do contact your retailer or your local distributor for help. We also sell new accesories, so that you can replace damaged parts that aren't covered by warranty.
