Machine Strength
I make a lot of bagels which are 50% or sometimes a little less hydration. I just want to know if the machine can handle this. I make 50 bagels at a time sometimes. I don't want to spend almost $ 800.00 for something that won't last long.

The Ankarsrum is absolutely strong enough to handle this type of mixing however, consumers do sometimes find it difficult to incorporate all of the flour in such a low hydration recipe. The dough hook for the Ankarsrum is designed differently from standard dough hooks and therefor is better suited for high hydration recipes. While the dough roller can handle any type of dough, because the Ankarsrum bowl is turning, along with the ingredients, it can sometimes take a bit more time to get a low hydration dough to come together.
