Balloon whisks
I have tried a couple of times to make meringue and it never gets to even soft peaks. I end up switching to my other mixer and giving up. I’ve used it on high-speed and nothing much really happens. It seems like the egg whites just climb up the side of the bowl and fly away from the balloon whisks. What am I doing wrong?

1) beater housing - this the black piece with the two metal posts that the beaters snap onto
2) large black gear - this really only sits in the beater housing one way but if you’ve taken your beater assembly apart, you need to make sure you fit the beater back into the housing before installing the beaters
3) and 4) a pair of multi wire balloon whisks
the beaters should individually spin while the entire beater assembly turns on the center of the bowl.

One thing you mentioned above that I'm curious about, you said the beaters were not moving fast enough to whip the egg whites. What speed did you have the mixer set at? At the highest speed, the Ankarsrum only take a few minutes to whip egg whites. Is it possible you over whipped them? Also, how many egg whites were you attempting to whip?
